It's Wednesday of Holy Week... Holy Wednesday?
After today it will be nothing but church! So, today I will be trying to leave early, go to the farmer's market, and cook one more lovely dinner for myself before the marathon of services.
Monday I made tomato soup from scratch (well, with canned tomatoes, as it's not really time for fresh ones yet), which was surprisingly easy and extremely tasty! I just made up the recipe, and I'll definitely be doing it again when I get a craving. (I think the key was the fresh rosemary)
Tuesday I made a Moroccan chicken stew with couscous, which I based loosely on a recipe I found online. It was also really yummy, and made the house smell heavenly with the blend of spices I used. The leftovers were just as good today for lunch as the dinner was last night, and I got to share it with my Parish Administrator, who loved it as well!
Tonight, I'm considering some serious comfort food...au gratin potatoes, steak, and garlic sesame kale...unless I find something at the farmer's market that inspires me in a different direction.
Cooking and knitting as much as I can are my self-care strategies this week.
